Chocolate Fondant Cake Class

Attended the Chocolate Fondant Cake Class by Calvin Ng at Artisan Cake, Kelana Mall on 19 July 2009....Coincidence 5 of us are Johorian, Azie (AzieCakesbiz), Rai & Fadzilah (they're from JB), Noni as well as LynnHassan (co-instructor)....everything made from chocolate....hmmmm memang sedap rasanye...& its not 'sticky' as normal fondant.....to Calvin, SooChing & Lynn, thanks a lot... class ends almost at 7pm...Jul 9, 2009
5-Days Professional Intensive Squire Kitchen Diploma Course
Back to school again & this time I enrolled myself to the 5-Days Professional Intensive Squire Kitchen Course from 1-5 July 2009 at ICCA, Kota Damansara. Class conducted by our great sifu, Rosalind Chan, the International Sugarpaste Artis (Canada) & ICCA founder....hmmmm 3 days away from office....so time to struggle....& starts to roll....
These some of tools that we get....mostly I don't have especially the SK brand... There are 20 of us, 2 ladies from Maldives, from Singapore, Brunei, Kota Kinabalu, Paka, Kertih, Kota Tinggi & the rest are local..... Glad to see our dearest sifu, k.Mis(MissCreative Cakes)....in the class too...
Day 1 - we need to cover 1 real cake with marzipan & 3 dummys with fondant. Hmmmmm pagi-pagi lagi dah kena menguli.... I feel so happy since that I manage to cover all with less so called 'elephant skin'... & not crack at all...... Then we need to do small flowers & a 'collar' using the colour flow method (same like wilton method) & Rosalind reminded us to ensure the 'collar' wont break once its dry...
Day 2 - string-works - the most difficult but interesting parts......by using tip 1L we need to pipe a line on the marking area, all over the cake. I really give-up since all my stringworks doesn't worked at all - end up with 'patah'.....so need to re-do again & again.....but got not choice, need to finish it up...at last manage to complete all the stringworks.....cantik pulak bila dah siap tuuu.... apart of that, we need to pipe some 'dotted spot' on every stringworks.....I just piped 2 or 3 dotted spot.....add-up with scallop underneath the '6 lines-bridge & touch-up with small tiny design on the edge of the stringworks......so mission completed !!! Its really looks so lovely once done.. 
Day 3 - making the bridal - not that stressfull as a stringworks.....can hear everyone laughing hear & there since we can see many kind of apperances while Rosalind always remind us NOT to produce an ET or ailens looks..... Meanwhile we need to do the smoking as well as the patchwork flowers....
Day 4 - the ribbon insertion & frill...meanwhile everyone is busy to finish all the outstanding works....prepare the patchwork flowers for the greeting card. We need to prepare the petals for the poppy as well as the rose.... before class end, Rosalind remind us to put the bridal standing on the cake for a night...
Day 5 - the final day.....first thing I look once coming to class is my bridal....lucky 'dia' masih berdiri tegak atas cake....time to dress them up.....we starts with the bride's gown, then the bridegroom's shirt, trouser, shoes & coat....Rosalind teach us how to fix their arms, fingers as well as ears....then we put the hair & veil....very interesting....we're enjoying...kecik-kecik dulu tak puas main playdoh.... Time to assemble all the flowers which have been made earlier.....I ask Rosalind to assemble my flowers.....so taraaaaa 1 big rose & rose bud, 4 poppy & poppy bud, berries & sweetpeas...

Class end at almost 8.30pm, after 5 days struggling so we made it....at last !!!! this is the most expensive course but my my 2cents comments , this is a very good exposure with latest techniques in cake decorating but difficult course therefore for those who plan to take should has some basic knowledge or experience or has completed wilton 1-3 or else its quite difficult to catch-up coz the modules run very fast....
A big thank to our great sifu, Rosalind & other staffs especially Adlina (thanks for add-on more hair on my bridegroom), Doris, Vivian, SweeSan etc ....hope to see you again in next classes...looking forward for the exotic flowers .....

Fondant & GumPaste - Grand Finale Cake


Baked again the icecream choc-strawberry cake for my Fondant & GumPaste grand finale cake....Ambika told us to come along with at least 9" or 10" round cake so I just bought the 9" one...& using carnations & daisy but my flowers does not completely dry...anyway...thanks a lot Ambika for teaching us the F&G....
At last, I've completed all of the wilton method of cake decorating....& looking forward for the SquireKitchen classes in July...insya allah....feel so excited to attend Rosalind's class....
Final Orchid Class

YokeMoy teach use how to assemble all petals... to make an orchid, all petals looks similiar but they're not actually....at last we manage to assemble all....tarraaaa...thanks dear YokeMoy..., for k.Jay, thanks a lot for being a very good host...& to k.Wan....your kuih really nice & sedap.. gonna missed you'll after this...
